Vinification Only grape varieties typical of the region are used for the vinification of Lambauer wines. Two wine lines are vinified at the Lambauer winery - Südsteiermark DAC / Schiefer- and Rieden wines.
Wine cellar
White wine cellar The wine cellar is located in the main building of the Lambauer Winery in Kitzeck. White as well as red wines are pressed here. A not insignificant part of the development of Austrian viticulture can be attributed to the vinification of white wines in stainless steel tanks. The vinification of the wines in stainless steel tanks promotes above all the pure varietal character of the individual grape varieties. A decisive advantage is the temperature-controlled fermentation process. The acid structure, which is so important for white wines, is then preserved during the subsequent tank aging and the wines appear fresh, fruity and youthful.
Red wine cellar For the fermentation of the red wines, stainless steel fermentation tanks are used for the most part. However, Bernhard Lambauer also practices open mash fermentation. A specific fermentation for red wines in stainless steel fermentation tanks is achieved by the fact that an exact fermentation temperature can be determined and maintained. Thus, the mash can be heated or cooled as required. Through this technique, the oenologist achieves red wines with intense color and fruit. After fermentation, they are placed in barriques or large oak barrels for further aging.
