Martin Auer has a long baking tradition and today stands for artisanal quality, clear design, and a contemporary approach to the baking craft. With around 40 locations in the Graz Region – many of them directly in the city area – the company is firmly rooted in everyday life. The range includes classic baked goods as well as freshly prepared lunch dishes and pastries. The underlying goal is to make good bread tangible while consistently focusing on sourcing and processing.
For many centuries, bread was baked at Dietrichsteinplatz. The former headquarters is closely linked to the history of the company and can still be visited today as a branch. Production has been moved to the studio in St. Peter, a modern, light-filled building with approximately 6,500 square meters of space. The bakery is fully visible, baking takes place throughout the day, and the milling of grains as well as the roasting of coffee happens right on site. In the attached café, one can immediately enjoy the results of this work.
In terms of sustainability, the studio also sets standards. Electricity is generated through a photovoltaic system, and the waste heat from ovens and refrigeration is used for heating and cooling the building. Thus, the studio combines modern technology with the ambition to rethink the baking craft in a contemporary way.
