We are the only supplier of the petites gris ("small gray") variety in the region, raised right next to the winery and finding a permanent place on the menu either directly at the farm or in surrounding award-winning restaurants. The small gray is rich in omega-3 fatty acids and has more protein than beef. What originally made its way into the pot as a meat substitute or Lenten dish is now conquering high-end cuisine and the hearts of curious culinary enthusiasts.
