Max Leodolter counters the trend of combining 28 flavours in 27 dabs on one plate that is currently sweeping through upscale gastronomy: "With my dishes, I want to make a clear statement on the plate, not get bogged down in flavour combinations and not overwhelm the guest."

  And it is precisely this statement that he has brought to the point with his menu "Lurg 1". It's all about meat from Aberdeen Angus ox and Lurgbauer pasture-raised veal - in new and exciting variations. Six small courses with newly interpreted classics and surprising culinary moments.
